The milking process and production should be correctly selected and managed so that the maximum Product quality, traceability, and safety (Bitsch, Kassa, Harsh Mugera, 2006). Milk storage and milking facilities will be regularly maintained and properly and cleaned. Likewise, the conveyance of drain to the customer is a way that will guarantee traceability and item quality.
